QUINOA SALAD

This quinoa salad is one of my favorite dishes, and one of the ones I do most to eat. It's simple to prepare and nutritious. It has quinoa, which is a good source of vegetable protein. Sweet potato is an excellent source of energy, fiber, minerals, and vitamins. To these two ingredients, you can add lots of fresh vegetables and seasonings and create delicious salads. Here is one of my favorite combinations:

Ingredients:

quinoa, one cup

1 or 2 sweet potatoes (depending on size)

2 or 3 handfuls of fresh spinach

one spring onion

a cup of cherry tomatoes

half a cup of cottage cheese

1-2 tablespoons of olive oil

one tablespoon of thick balsamic oil

1-2 tablespoons of raisins

one tablespoon of sesame seeds

a bit of salt

a bit of pepper

some cinnamon

Preparation:

1. Cook the quinoa in salted water. When it is ready, take it out and let it cool down

2. Peel, wash, and cut the sweet potato into thin slices. Heat the oven to 180 degrees. Put the sweet potato slices on a tray with a little olive oil, salt, pepper, and cinnamon and bake them until they are soft and a little toasty

3. Wash and cut the spring onions and tomatoes

4. Wash the fresh spinach and place it as a base in a bowl. Add the sweet potato, quinoa, spring onion, tomato, and cottage cheese

5. Add the raisins and sesame seeds

6. Dress the salad with a little oil, balsamic vinegar, salt, and pepper
