RICE BOWL

As a celebration of my new website which I have worked with love, I would like to share with you one of my favorite recipes. I love bowls because it’s easy to prepare and you can mix a lot of different things. You don’t need to be a master in the kitchen to be efficient and cook healthy. With this delicious rice bowl you will get the energy and vitamins you need. It is also perfect for lunch in anywhere.

INGREDIENTS (Serves 1):

100 gr basmati or jasmine rice 

150 ml water or vegetable stock

1 green onion

1/5 avocado

1/2 yellow pepper

A handful of rocket salad

A couple of almonds

A couple of strawberries

A few of pine nuts

Olive oil

Linseed oil

Salt

Pepper

Lemon juice

Coconut oil

PREPARATION

  1. Cook the rice in salted water or vegetable stock. Leave it to cool down and put it in a bowl 

  2. Wash and chop the green onion, the avocado, the yellow pepper and the strawberries

  3. Wash the rocket salad and put everything on top of the cold rice

  4. Add some crushed almonds

  5. Heat up a little bit of coconut oil in a pan and roast some pine nuts. Add them too

  6. For the dressing, mix some olive oil, linseed oil, salt, pepper and lemon juice, and add it to the ingredients in the bowl
