PUMPKIN SOUP

Pumpkin soup is one of my most recurring dishes in the fall-winter season. It's delicious, very nutritious and you can accompany it with different things like eggs or salad. You can also have it as a starter.

Ingredients:

- Pumpkin

- Onion

- Carrot

- Potato

- Leek

- Vegetables to taste

- Olive oil

- A little cream or coconut milk

- Salt and pepper

- Spices to taste

Preparation:

- Peel and cut the vegetables

- In a pot, put a little olive oil and sauté the vegetables

- Add salt, pepper, and spices to taste and cover with water

- Let it cook for 20-30 minutes over medium heat

- Then add a little bit of cream and whisk it
